1、以榛蘑入菜为最佳,榛蘑是东北特产,其菌味浓郁,伞盖厚身,质地脆嫩。如果买不到榛蘑,可用干茶树菇来代替。Z\1v

2、用土鸡或走地鸡为主料,其鸡味浓郁,肉质烟韧,久煮会更入味,不会淡无味,因此不宜选购童子鸡。5[ZS?,PCLO2V
3、可用红薯、绿豆或土豆粉条,由于红薯粉条可用开水泡发,且久煮不易烂糊,所以建议用红薯粉条入菜。d(dc$rc
4、干茶树菇应用温水泡发,不可用开水或冷水,前者会使茶树菇变得软烂,香味流失;后者不容易泡发,香味较淡,不仅难煮透,还会干硬难嚼。
